Description
A coast to coast blend of one saison strain from a famous Northeast U.S. brewery and one Brett strain from a Northwest U.S. brewery. The blend quickly produces a pleasantly dry beer, filled out with aromas of white wine, hay, and mulled citrus.
This strain tests positive for the STA1 gene, an indicator that this strain may have the ability to metabolize dextrins over time, resulting in higher than expected attenuation.

Fermented Saison from 1.048 to 1.013 in about a week or so. Over the next three weeks took it down to 1.007. (French saison yeast on the same wort ended up at 1.008) Kegged and carbed and had a very strong sweaty horse blanket and earthy notes that have really toned down pleasantly in the keg. Very clearly Saison yeast with a hint of funk after a week in the keg.
