So far, I’ve ordered 50 lbs of milled sake rice and I’m quite pleased with the quality and pricing. This year, aside from making 5 kilos of kome koji, ill be brewing 2 batches of sake icing identical processes with the exception of using different yeasts, specifically #7 and #9 sake yeast to see which i like better.
One thing I wish were available is better defined mill sizing. Right now, the mill size ranges between 40-60%, but I’d love to see a 40-50%, and a 50-60% so I can correctly identify my sake as ginjo or daiginjo, and of course to see if there is a difference in taste/quality. Will be purchasing again!
